This simple recipe is a delicious and healthy alternative to caramel popcorn. It’s the perfect combination of sweetness and cinnamon, and it only takes 5 minutes to prepare!
Make popcorn in a popcorn maker, or heat a small amount of oil in a large non-stick pot and add one or two popcorn kernels. Once kernels start popping add the rest of the popcorn kernels to the pot and cover. Heat until popping sounds slow down and most of the kernels are popped, shaking the pot occasionally to ensure all the kernels pop (be careful not to burn the popcorn!).
Spread popcorn onto a large baking sheet and drizzle ⅛ cup olive oil over all of the popcorn. Mix using your hands until oil has been distributed over all of the popcorn. Transfer popcorn into a large bowl.
In a separate small bowl combine honey, salt, and vanilla extract. Drizzle mixture over popcorn and toss to combine using hands or large metal salad spoons.
Sprinkle cinnamon (using about ¼ tsp at a time) over the popcorn and stir until popcorn is evenly coated.
